YERLİM/ANIA Our early harvest/cold pressed oil takes after the name “Yeşilce /Pregreen” is originaly inspired by the color of emerald green olives.
We started our olive harvest for 2021-2022 on September 25. The dark green ‘Memecik’ olives were harvested from the trees to the boxes by hand and brought to the oil mill for extraction the same day. They were separated from their leaves, washed with clean spring water and processed in our Organic Certified Olive Oil Production unit which equipped with the latest technology. After paper filtering, bottling was done right away.

Very Early Harvest bitter, burning oil PREGREEN -the bitterness is the most clear indicator for the body quality and polyphenols- the high quality olive oil can be produced from bitter green olives in limited amounts during the harvest period that can only last for two weeks.
With the values of very low free oleic acid and peroxide, very high polyphenol, intense consistency, bitter&burning, emerald green healing source (EVO) olive oil should never be heated or cooked. The very best use is daily one tablespoon before breakfast for healthy life. In gastronomy use as a finishing touch of a certain quality for starters and appetizers; it leaves a unique remaining taste in your mouth. Sensory data; Bitterness (7,5), piquantness (7), fruitiness (7) very strong balance. The flavors and odors are predominantly of raphanistrum, green/fresh almond , olive leaves, green tomatoes, tomato leaves, cress, rocket and dandelion.
